Ingredients
For the rice salad
1 Tuna Pocket TRATA tuna in olive oil
100 grams boiled rice
1 small avocado, diced
1 tablespoon orange bell pepper, diced
1 tablespoon corn
4-5 cashews nuts
For the dressing
1 teaspoon parsley, finely chopped
1 tablespoon coriander, finely chopped
3 fresh mint leaves
¼ teaspoon curry powder
½ teaspoon ginger, grated
1 small garlic clove
1 tablespoon olive oil
2 tablespoons lime juice
1 teaspoon apple vinegar
Freshly ground pepper
Salt

Directions
Mix all the dressing ingredients in the blender.
Put the rice in a bowl, add pepper, corn, cashews, top off with the dressing and mix.
Serve your rice salad with tuna and enjoy.
Tips
- You can keep this rice salad in the fridge for 24 hours so that it can stay cool and then add the tuna when you serve
- You can also add 2 tablespoons boiled peas or green beans
- This recipe can also be made with tuna in water
- You can also use cauliflower rice and create another unique meal to bring to the office!
