Ingredients
1 Tuna Pocket TRATA tuna in olive oil
50 grams groats
1 cucumber, diced
8-10 cherry tomatoes, cut in fours
1 spring onion, finely chopped
4 tablespoons parsley, finely chopped
1 tablespoon mint, finely chopped
1 tablespoon olive oil
2 lemons

Directions
Put the groats in a bowl and add 150ml warm water and the juice from one lemon, leave for 30’ to soften and then strain.
In a bowl, mix the groats, mint, parsley, spring onion, cherry tomatoes and cucumber.
Add juice from one lemon, as well as the olive oil, pepper, salt and marinade the tabbouleh in the fridge for 60’ or more..
Serve by adding tuna and some freshly ground pepper
