Ingredients
4 medium sweet potatoes, well rinsed
For the stuffing
2 packs Smoked Salmon Pocket TRATA
150 gr. spinach, finely chopped
150 gr. mascarpone
2 onions, finely chopped
2 tbsp. olive oil
½ κ.γ. white pepper
1 lime
2 tbsp. coriander or dill
Freshly ground black pepper

Preparation
With a knife, carve the sweet potatoes in half and put them in the oven at 180°C
for about 80 ‘.
Take out the potatoes and leave them aside to cool, until we prepare the stuffing.
Saute the spinach and onions with the olive oil in a pan for 5΄.
Transfer the spinach, without its liquids, to a bowl.
Add the mascarpone, lime zest and a little of its juice, white pepper, salt, salmon and mix.
Open the potatoes, with a fork and press them lightly to open some more.
Then, fill them with the stuffing.
Sprinkle with dill or coriander and serve.
Tips:
- We can add 1 clove of garlic, finely chopped to the spinach
- Truffle oil goes well with sweet potatoes with salmon – add 2 drops to each potato before serving
