and sweet-sour sauce

2 packs of Smoked Salmon Pocket TRATA
1 medium onion, grated
1 clove garlic, grated
50 gr. wholemeal toast bread, ground
1 tbsp. parsley, finely chopped
½ tsp. lemon zest
1 tbsp. white vinegar
1 tbsp. sesame oil
1 egg
60 gr. sesame seeds
Freshly ground pepper
Salt
For the sweet-sour sauce
150ml pineapple juice
3 tbsp. soy sauce
2 tbsp. brown sugar
1 clove garlic, mashed
1 tsp. ginger, grated
2 tbsp. ketchup
1 tablespoon sesame oil
1 ½ tsp. corn flour
Freshly ground pepper
Salt

Preparation
Salmon meatballs
In a bowl, mix the crumbs and salmon, add the egg, onion, garlic, parsley, zest, sesame oil, salt and pepper.
Add the egg, vinegar and knead to combine the ingredients.
Shape meatballs with oiled hands, roll them onto the sesame seeds, place them on a baking tray covered with baking parchment paper and bake for 20′ at 180°C.
Sweet-sour sauce
In a saucepan, mix all the ingredients of the sauce and simmer for 6-8′ until the sauce sets.
Serve the hot salmon meatballs with the sweet and sour sauce and some lime.
Tips:
- Salmon meatballs can be cooked like all meatballs, try them with tomato sauce and rice or mashed potatoes
- In the sweet and sour sauce you can use honey instead of brown sugar

- If you are having high blood pressure issues, it would be good to choose a soy sauce with low sodium content.
- If you “avoid” including fish in the family diet, this meal is sure to be accepted and please all.
