Ingredients

2 packets Smoked Salmon Pocket TRATA

For the arugula pesto
100 gr. tender rocket
10 basil leaves
60ml olive oil
1 tbsp. whitened almonds
2 tbsp. parmesan
1 tbsp. olive oil
1 lemon
1 tsp. balsamic vinegar
Freshly ground black pepper
Salt

To serve
300 gr. penne rigate, boiled
Baby arugula leaves

Preparation

Peel half the lemon without reaching the white part and chop it as finely as possible.

In a blender, mash the almonds, arugula, basil, parmesan, balsamic, 1 tbsp. lemon, salt, pepper and olive oil.

Once the pesto takes the form of a sauce, stop blending and pour over the pasta with as much pesto as you like.

Add the salmon and stir.

Serve the penne with arugula leaves and extra pesto.

Tips:

  • You can keep the remaining pesto in the fridge for up to 1 week.
  • You can use any pasta shape you like
  • Because arugula is spicy, avoid adding too much pepper
